Shaved Brussels Sprout Salad (with Bacon)

- 4 Slices Bacon
- 4 cups Thinly Sliced Brussels Sprouts
- ½ Onion, Finely Chopped
- 1 Tbsp Butter
- ½ cup Chopped Walnuts, Toasted
- Juice of one Lemon
- 1 Tbsp Maple Syrup
- 2 Tbsp Olive Oil
- Salt and Pepper, to taste
- 1 tsp Dijon Mustard
- Orange Slices, for garnish
- Chop and toast walnuts in a small skillet over medium heat. Set aside.
- In same small skillet, melt butter and add onion. Saute until softened.
- Meanwhile, combine lemon juice, maple syrup, olive oil, salt, pepper, dijon mustard, and sautéed onion in food processor or blender and puree until smooth. Set aside.
- Cook bacon in large skillet until crisp. Let drain on paper towels and remove the grease into a small bowl.
- Add thinly chopped Brussels Sprouts to large pan and drizzle with bacon grease. Saute brussels sprouts until color changes slightly and they soften.
- Add in chopped bacon, toasted almonds and mix well.
- Remove Brussels sprouts and place in a large bowl. Add dressing and a squeeze of fresh orange juice. Mix thoroughly and plate.
- Serve with chicken for a complete meal or just eat this delicious salad.
