Shaved Brussels Sprout Salad (with Bacon)

Ingredients
  • 4 Slices Bacon
  • 4 cups Thinly Sliced Brussels Sprouts
  • ½ Onion, Finely Chopped
  • 1 Tbsp Butter
  • ½ cup Chopped Walnuts, Toasted
  • Juice of one Lemon
  • 1 Tbsp Maple Syrup
  • 2 Tbsp Olive Oil
  • Salt and Pepper, to taste
  • 1 tsp Dijon Mustard
  • Orange Slices, for garnish
Instructions
  1. Chop and toast walnuts in a small skillet over medium heat. Set aside.
  2. In same small skillet, melt butter and add onion. Saute until softened.
  3. Meanwhile, combine lemon juice, maple syrup, olive oil, salt, pepper, dijon mustard, and sautéed onion in food processor or blender and puree until smooth. Set aside.
  4. Cook bacon in large skillet until crisp. Let drain on paper towels and remove the grease into a small bowl.
  5. Add thinly chopped Brussels Sprouts to large pan and drizzle with bacon grease. Saute brussels sprouts until color changes slightly and they soften.
  6. Add in chopped bacon, toasted almonds and mix well.
  7. Remove Brussels sprouts and place in a large bowl. Add dressing and a squeeze of fresh orange juice. Mix thoroughly and plate.
  8. Serve with chicken for a complete meal or just eat this delicious salad.
