Apple Pie Biscuits

- For the Biscuits:
- 1 Biscuit recipe
- 2 Tbsp coconut sugar
- For the Apples:
- 3 apples, peeled and sliced
- 1 tsp cinnamon
- ½ tsp ground nutmeg
- pinch of ground ginger
- 2 Tbsp Maple Syrup
- 2 Tbsp Butter
- For the Topping:
- 1 egg beaten
- 1 Tbsp coconut sugar
- ½ tsp cinamon
- Preheat oven to 375 degrees.
- Peel, core and thinly slice apples.
- Heat butter in a medium skillet over low-medium heat.
- Once melted add syrup, spices, stir and then add apples.
- Heat until just beginning to soften. Remove and let cool.
- Mix biscuits according to directions and add 2 Tbsp coconut sugar to recipe.
- Place dough between two pieces of parchment paper and roll until ½ inch thick rectangle.
- Place apples over half the dough and fold over the dough on top of the apples.
- Cut, with a sharp knife, into 10-12 small squares and place on a parchment lined baking sheet.
- Whisk eggs. Brush tops of biscuits with a thin coating of whisked eggs and sprinkle with cinnamon and sugar.
- Bake for 15-18 minutes.
