Apple Cider Soy Brine

Ingredients
  • 1 12-15 lb turkey
  • 3 cups apple cider
  • ½ cup coconut sugar
  • 3 Tbsp peppercorns
  • 2 cinnamon sticks
  • 2-inch pieces of fresh ginger chopped
  • ½ cup soy sauce
  • 3 twigs rosemary
  • 1 bunch of thyme
  • 1 orange peel, chopped
  • 1 cup salt
  • 1 quart water
  • Additional water to fully immerse turkey
Instructions
  1. In a large stockpot over low-medium heat add all ingredients, except turkey and additional water.
  2. Bring to a boil, reduce to a simmer and let simmer for 5-8 minutes.
  3. Remove from heat and let cool to room temperature.
  4. Place turkey in a stockpot or gallon tub that is big enough to hold the turkey and enough liquid to cover (I would recommend a brine bag or oven bag).
  5. Pour brine over turkey and add enough water to cover.
  6. Seal bag or cover and refrigerate for 12-24 hours.
  7. Remove turkey and let dry.
  8. Pat dry if needed.
  9. Roast according to directions.
  10. Enjoy a MOIST turkey.
