Better Than Butter, Bacon Jam

- 1 lb bacon
- 1 Tbsp butter
- 1 sweet onion, chopped
- 1 tsp minced garlic
- 1 tsp dijon mustard
- ¼ cup balsamic vinegar
- ¼ cup maple syrup
- Bake bacon.
- In a small sauce pan, heat butter over low-medium heat.
- Add chopped onion and cook to caramelize.
- Once caramelized, add garlic and cook until fragrant about 1 minute.
- Add remaining ingredients, dijon mustard, balsamic vinegar and maple syrup and crumbled bacon.
- Bring to a simmer and then remove from heat.
- Place in a food processor and blend until finely chopped (I left mine slightly chunky).
- Enjoy warm or cold.
- Store in the refrigerator.
