Better Than Butter, Bacon Jam

Ingredients
  • 1 lb bacon
  • 1 Tbsp butter
  • 1 sweet onion, chopped
  • 1 tsp minced garlic
  • 1 tsp dijon mustard
  • ¼ cup balsamic vinegar
  • ¼ cup maple syrup
Instructions
  1. Bake bacon.
  2. In a small sauce pan, heat butter over low-medium heat.
  3. Add chopped onion and cook to caramelize.
  4. Once caramelized, add garlic and cook until fragrant about 1 minute.
  5. Add remaining ingredients, dijon mustard, balsamic vinegar and maple syrup and crumbled bacon.
  6. Bring to a simmer and then remove from heat.
  7. Place in a food processor and blend until finely chopped (I left mine slightly chunky).
  8. Enjoy warm or cold.
  9. Store in the refrigerator.
