Traditional Hawaiian Flatbread with Crispy Pancetta

Serves: 4
- 1 Flatbread
- ½ cup BBQ sauce
- ½ pineapple, thinly sliced
- 1 Tbsp butter
- 4 oz. pancetta
- 1 cup shredded pork
- ½ cup sheep's cheese (cheese of choice)
- green onion
- Make flatbread recipe.
- Meanwhile cut pancetta into small pieces and pan fry until crisp. Remove and drain on paper towels to remove excess grease.
- Drain grease from pan, add butter and pineapple. Cook until just beginning to caramelize, 1-2 minutes per side.
- Spread bbq sauce on flatbread, top with shredded pork, pineapple, sheep's cheese and crisped pancetta.
- Back for an additional 8-10 minutes or until cheese is melted.
- Top with thinly sliced green onion and enjoy!
