Flourless Double Fudge Caramel Brownies

Ingredients
  • 2 cups cooked black beans
  • 3 eggs
  • ⅓ cup melted coconut oil
  • ¼ cup cocoa powder
  • 2 teaspoons vanilla extract
  • ½ cup coconut sugar
  • ½ cup semi-sweet chocolate chips
  • 1 batch coconut-milk caramel sauce
  • Walnuts and pomegranate arils (optional)
Instructions
  1. Prepare caramel sauce according to directions.
  2. Pre-heat oven to 350 degrees.
  3. In a blender, combine the black beans, eggs, melted coconut oil, cocoa powder, vanilla, and coconut sugar.
  4. Blend until smooth.
  5. Prepare an 8x8-inch glass baking dish and pour the batter into the greased dish.
  6. Sprinkle chocolate chips over the top and use a spatula to push them down into the batter just a little (but not too much; they will sink some while the brownies bake).
  7. Pour half of the caramel sauce over the brownies and swirl with a knife.
  8. Bake at 350 degrees for 30-40 minutes, until brownies are set in the middle. Watch the edges for excess browning.
  9. Cool and drizzle with remaining caramel sauce and sprinkle with walnuts and pomegranate arils.
