Oven Baked Basil Parmesan Shoestring Fries

Ingredients
  • 4-5 medium organic potatoes, peeled and spiralized (or cut into very thin strips)
  • 2 Tbsp olive oil
  • Salt, to taste
  • ¼ cup freshly grated parmesan cheese
  • 2-3 Tbsp freshly chopped basil
  • Additional salt & pepper, to taste
  • Strawberry Ketchup:
  • 1 batch ketchup
  • 2 cups strawberries, hulled
Instructions
  1. Peel potatoes and spiralize or cut into very thin match-stick sized pieces.
  2. Place in a large bowl of water and let soak 20-30 minutes or overnight.
  3. Remove and pat dry with a towel.
  4. Preheat oven to 425 degrees.
  5. Brush olive oil over the bottom of a baking sheet.
  6. Add dried potatoes to a bowl and add 2 Tbsp olive oil and salt.
  7. Mix well and spread out on a baking sheet in a line layer.
  8. Bake for 8-10 minutes, remove and turn to mix the shoestrings for even crisping.
  9. Bake an additional 5-10 minutes or until crisp.
  10. Remove from oven and sprinkle with parmesan cheese and fresh basil.
  11. Serve.
  12. For the Ketchup:
  13. Hull strawberries and place on a small baking sheet.
  14. Bake at 350 degrees for 10 minutes.
  15. Remove and let cool.
  16. Make one batch of homemade ketchup and add to food processor or blender.
  17. Add in roasted strawberries and blend until smooth.
  18. Serve or store in airtight container in the refrigerator for up to 2 weeks.
  19. Dip shoe string fries in strawberry ketchup.
