The Best Moist Cornbread Ever

- 1½ cups cornmeal (finely ground)
- ¾ cup tapioca flour
- ⅓ cup coconut sugar (or honey)
- 2 tsp baking powder
- 1 tsp baking soda
- ¾ tsp salt
- 6 Tbsp butter
- 2 eggs
- 1 cup milk (or milk alternative)
- 1 Tbsp lemon juice
- Preheat oven to 400 degrees.
- Prepare an 8x8 dish by using parchment paper or buttering the sides.
- In a bowl mix together the cornmeal, tapioca flour, coconut sugar, baking powder, baking soda and salt.
- In another bowl melt the butter and let cool slightly.
- Whisk in the eggs, milk and lemon juice.
- Pour wet ingredients into dry and mix until all clumps are gone.
- Pour into baking pan and bake for 20-25 minutes or until toothpick inserted comes out clean.
