One Bowl Blueberry Oatmeal Breakfast Cookies {Vegan, Gluten-Free}

Ingredients
  • ½ cup flax + chia meal
  • ½ cup tapioca or oat flour
  • 1½ cup old fashioned oatmeal
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 tsp cinnamon
  • 2 Tbsp chia seeds
  • ½ cup applesauce
  • 1 cup mashed banana
  • 4 Tbsp coconut oil
  • ¼ cup sorghum (molasses, honey, maple syrup)
  • ½ tsp vanilla
  • ¾ cup blueberries
Instructions
  1. Preheat oven to 350 degrees and prepare a baking sheet.
  2. In a large bowl mix together flax and chia meal, tapioca, oatmeal, baking soda, salt, cinnamon and chia seeds.
  3. Mix well.
  4. Add in applesauce, mashed banana, coconut oil, sweetener, vanilla.
  5. Mix until incorporated.
  6. Fold in blueberries.
  7. Place a spoon full of batter on the cookie sheet and slightly flatten. Continue until cookie sheet is filled and all batter is used.
  8. Bake for 20-25 minutes or until cooked through.
  9. Place on a cooling rack and store in an air-tight container in the refrigerator.
