One Bowl Blueberry Oatmeal Breakfast Cookies {Vegan, Gluten-Free}

- ½ cup flax + chia meal
- ½ cup tapioca or oat flour
- 1½ cup old fashioned oatmeal
- ½ tsp baking soda
- ¼ tsp salt
- 2 tsp cinnamon
- 2 Tbsp chia seeds
- ½ cup applesauce
- 1 cup mashed banana
- 4 Tbsp coconut oil
- ¼ cup sorghum (molasses, honey, maple syrup)
- ½ tsp vanilla
- ¾ cup blueberries
- Preheat oven to 350 degrees and prepare a baking sheet.
- In a large bowl mix together flax and chia meal, tapioca, oatmeal, baking soda, salt, cinnamon and chia seeds.
- Mix well.
- Add in applesauce, mashed banana, coconut oil, sweetener, vanilla.
- Mix until incorporated.
- Fold in blueberries.
- Place a spoon full of batter on the cookie sheet and slightly flatten. Continue until cookie sheet is filled and all batter is used.
- Bake for 20-25 minutes or until cooked through.
- Place on a cooling rack and store in an air-tight container in the refrigerator.
