Banana Bread French Toast Cups

Serves: 6-8
- 1 batch banana chia seed cake (can make in a loaf pan it just needs to bake longer)
- 4 eggs
- 1 cup milk (or milk alternative)
- 2 tsp vanilla
- 2 tsp cinnamon
- ½ tsp nutmeg
- 6 Tbsp butter
- ¼ cup coconut sugar
- ½ cup pecans, chopped
- 1 Tbsp maple syrup
- 1 tsp cinnamon
- ¼ tsp nutmeg
- Preheat oven to 350 degrees and grease muffin tin.
- Cube banana bread into 1 inch slices.
- Whisk eggs in a bowl and whisk in vanilla, cinnamon, and nutmeg.
- Place cubed banana bread into a large bowl and add egg an milk mixture.
- Let soak for 10-15 minutes.
- Meanwhile mix together in a small bowl, melted butter, coconut sugar, maple syrup, cinnamon, nutmeg and pecans.
- Place soaked cubed banana bread into muffin tins (should have enough for all 12 and they may be heaping).
- Drizzle with pecan sauce.
- Bake for 30-35 minutes or until browned on top and cooked through.
