Classic Meatloaf with a Twist

Ingredients
  • Meatloaf:
  • 1 lb. hamburger (grass-fed)
  • 1 egg
  • ¼ c. homemade ketchup
  • 1 tsp. Worcestershire sauce
  • 2 tbsp. finely chopped onion
  • 1½ Tbsp chia seeds
  • ⅓ c. stock
  • Salt and pepper
  • 1 cup finely chopped or shredded veggies (spinach, carrots, zucchini all work great)- optional but a GREAT choice
  • Topping:
  • ¼ cup homemade ketchup
  • 1 Tbsp local honey
Instructions
  1. Preheat oven to 350 degrees and prepare and 9x13 inch pan or loaf pan
  2. Finely chop onion and other veggies.
  3. Saute onion in a small amount of coconut oil until tender.
  4. Mix all ingredients together and form into balls or place in a loaf pan.
  5. Bake for 30 minutes remove and add topping (ketchup and honey mixture)
  6. Continue baking for 15-20 minutes or until cooked through.
