Classic Meatloaf with a Twist

Serves: 4
- Meatloaf:
- 1 lb. hamburger (grass-fed)
- 1 egg
- ¼ c. homemade ketchup
- 1 tsp. Worcestershire sauce
- 2 tbsp. finely chopped onion
- 1½ Tbsp chia seeds
- ⅓ c. stock
- Salt and pepper
- 1 cup finely chopped or shredded veggies (spinach, carrots, zucchini all work great)- optional but a GREAT choice
- Topping:
- ¼ cup homemade ketchup
- 1 Tbsp local honey
- Preheat oven to 350 degrees and prepare and 9x13 inch pan or loaf pan
- Finely chop onion and other veggies.
- Saute onion in a small amount of coconut oil until tender.
- Mix all ingredients together and form into balls or place in a loaf pan.
- Bake for 30 minutes remove and add topping (ketchup and honey mixture)
- Continue baking for 15-20 minutes or until cooked through.
