The Best Cherry Rhubarb Cobbler with Honey Buttered Biscuits

Ingredients
  • 1 batch buttery grain free biscuits
  • 3 cups sweet cherries (I used frozen)
  • 3 cups rhubarb, diced into 1" sections
  • ¼ cup coconut sugar (or honey)
  • zest of 1 orange
  • 2 teaspoons vanilla
  • ½ teaspoon ground nutmeg
  • ½ teaspoon cinnamon
  • pinch of sea salt
  • juice from ½ orange
  • ¼ cup butter
  • 1 tablespoon honey
Instructions
  1. Make biscuits and set aside.
  2. Preheat oven to 350 degrees
  3. In a large bowl add cherries, rhubarb, coconut sugar, orange zest, vanilla, nutmeg, cinnamon, salt and orange juice.
  4. Mix well and place in a cast iron skillet.
  5. Bake for 20-25 minutes, remove and add biscuits and cook for an additional 2-5 minutes.
  6. Whip honey with butter and add to the top of each serving.
  7. Enjoy!
