Blender Avocado Brownies with Chocolate Frosting
- 2 avocados
- 1½ cup black beans
- 3 eggs
- ⅓ cup coconut oil, melted
- ½ cup cocoa powder
- 2 teaspoons vanilla
- ½ cup coconut sugar
- ½ teaspoon baking soda
- ½ teaspoon salt
- FROSTING
- ¼ cup coconut sugar {honey}
- ¼ cup coconut oil
- 2 ounces dark chocolate
- ⅓ cup cocoa powder
- Preheat oven to 350 degrees.
- Line an 8x8 inch baking dish with parchment paper {or grease}.
- Place avocados through salt in blender and puree until smooth. May have to do additional mixing with a spoon.
- Pour into 8x8 inch pan.
- Bake for 30-40 minutes or until toothpick comes out clean.
- Let cool.
- Meanwhile to make frosting add sugar, oil, dark chocolate and cocoa powder to a small saucepan and heat over low heat.
- Continue mixing until melted and creamy.
- Frost cooled brownies.
