Blender Avocado Brownies with Chocolate Frosting

Ingredients
  • 2 avocados
  • 1½ cup black beans
  • 3 eggs
  • ⅓ cup coconut oil, melted
  • ½ cup cocoa powder
  • 2 teaspoons vanilla
  • ½ cup coconut sugar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • FROSTING
  • ¼ cup coconut sugar {honey}
  • ¼ cup coconut oil
  • 2 ounces dark chocolate
  • ⅓ cup cocoa powder
Instructions
  1. Preheat oven to 350 degrees.
  2. Line an 8x8 inch baking dish with parchment paper {or grease}.
  3. Place avocados through salt in blender and puree until smooth. May have to do additional mixing with a spoon.
  4. Pour into 8x8 inch pan.
  5. Bake for 30-40 minutes or until toothpick comes out clean.
  6. Let cool.
  7. Meanwhile to make frosting add sugar, oil, dark chocolate and cocoa powder to a small saucepan and heat over low heat.
  8. Continue mixing until melted and creamy.
  9. Frost cooled brownies.
