Avocado Toasts

- 1 cup shredded hash browns
- ½ avocado
- salt and pepper, to taste
- 2-3 small heirloom tomatoes
- balsamic vinegar
- Preheat waffle iron. When ready add the hash browns. Press down well and let cook until crispy and browned.
- While hash browns are cooking, scoop out avocado, mash and season with salt and pepper.
- Cut heirloom tomatoes.
- To assemble, top crispy waffle with avocado, and heirloom tomatoes.
- Drizzle with balsamic vinegar.
