Peppered Steak with Grilled Peach Salsa

Serves: 2-4
- 2 steaks of choice
- Salt & pepper, to taste
- 4 peaches
- 1 Tbsp aged balsamic vinegar
- ½ tsp dried thyme
- Heat grill.
- Generously pepper steaks and add salt to liking.
- Begin grilling steaks.
- Meanwhile, peel and halve peaches.
- Add to grill during last 3-5 minutes. Grill until soft and just beginning to caramelize.
- Remove steaks and peaches.
- Let steak rest and dice peaches.
- Add balsamic vinegar (more of less depending on taste preferences) , dried thyme and salt and pepper to a bowl. Mix gently as peaches will be tender.
- Slice steaks and top with peach salsa.
