Spaghetti Pie (Paleo, Grain-Free, Gluten-Free)

Ingredients
  • 1 spaghetti squash
  • 3 eggs
  • 2 Tbsp butter
  • 1 onion, chopped
  • 8 oz. sliced mushrooms
  • 2 garlic gloves, minced
  • 3 cups spinach, chopped
  • 1 lb Italian Sausage
  • 2 cups marinara sauce
  • ¾ cup cheese, optional
  • Garnish, fresh basil
Instructions
  1. Cook spaghetti squash. Check out this tutorial.
  2. Heat a large skillet over medium heat add the butter.
  3. Once hot, add the onion and mushroom. Cook until onion is translucent.
  4. Add garlic and cook until fragrant 1-2 minutes.
  5. Add in spinach and cook to wilt.
  6. Remove from pan and set aside.
  7. Add sausage to hot skillet. Cook until done and add to onion and mushroom mixture. Mix.
  8. After squash is complete, scoop out from shell and place in a bowl.
  9. Squeeze the squash in your hands to remove excess water - IMPORTANT STEP!
  10. Place in a bowl, add eggs and mix thoroughly.
  11. Preheat oven to 350 degrees and prepare pie pan with butter.
  12. Add spaghetti squash mixed with eggs to pie pan and press along edges and to the bottom.
  13. Top with the meat and mushroom mixture and then the marinara sauce.
  14. Add cheese if using and place in the oven.
  15. Bake 30-40 minutes or until cheese is melted.
  16. Remove and let cool slightly. Garnish with basil and serve!
