Caramelized Onion and Sage Roasted Squash

Ingredients
  • 2 Whole Delicata Squash
  • 3 Tbsp Unsalted Butter (Coconut Oil for Vegan)
  • 1 tsp Dried Thyme
  • Salt and Freshly Ground Black Pepper
  • 1 Tbsp Unsalted Butter (Coconut Oil for Vegan)
  • 1 Cup Sweet Onion, finely sliced
  • 4 tsp Fresh Sage, finely chopped
Instructions
  1. Heat the oven to 350
  2. Peel the squash, leaving the skin in the crevices.
  3. Trim the ends of the squash and cut in half lengthwise to scoop out the seeds.
  4. Slice the halves crosswise into approximately ¼" slices.
  5. In a 10" cast iron skillet, heat 1 Tbsp butter over medium-high heat and add half of the squash into a single layer and cook without moving until the slices begin to brown, about 2 minutes.
  6. Flip each piece and cook an additional 2 minutes on the other side.
  7. Transfer completed squash to a separate plate and repeat with the remaining squash.
  8. Sprinkle the squash with the thyme, salt and pepper.
  9. Heat the remaining 1 Tbsp of butter in the skillet over medium heat.
  10. Add the onion, stirring frequently until they turn a golden brown on the edges.
  11. Remove the skillet from the heat and immediately add the sage, scraping up the browned parts remaining in the skillet.
  12. Place cooked squash back in skillet and combine with onion and sage.
  13. Cover the skillet with foil and bake in the oven until the squash is tender, approximately 30 minutes.
  14. Season to taste with salt and pepper after removing from oven.
