Turkey, Caesar Stuffed Sweet Potatoes

Ingredients
  • 3 sweet potatoes, pre-cooked
  • 2 cups shredded turkey (chicken will work as well)
  • 4 cups spinach, chopped
  • ½ cup dried cranberries
  • 2 Tbsp coconut oil
  • ½ cup parmesan cheese
  • DRESSING
  • 2 garlic cloves, minced
  • 1 cup mayonnaise (homemade or store bought)
  • 1 tsp dijon mustard
  • 2 Tbsp red wine vinegar
  • 2 tsp worcestershire sauce
  • ½ cup parmesan cheese
  • salt and pepper, to taste
  • ¼ cup olive oil
Instructions
  1. Preheat oven to 350 degrees and prepare a baking pan with parchment paper.
  2. Add 1 Tbsp parmesan cheese to baking sheet and spread into a thin layer. Repeat until you have 6-8 cheese rounds.
  3. Bake for 4-6 minutes or until golden and just beginning to crisp. Remove and cool on baking sheet.
  4. Chop spinach and place in a bowl with turkey and cranberries. Mix together.
  5. Heat a large skillet over medium heat and coconut oil.
  6. Once hot add spinach and turkey mixture and cook until spinach just begins to wilt.
  7. Remove from heat.
  8. Cut sweet potatoes in half and remove some of the sweet potato (saving for another dish). Stuff the sweet potatoes with the turkey-spinach mixture.
  9. Place on parchment lined baking sheet and bake for 10 minutes.
  10. Meanwhile, make dressing.
  11. Add garlic, mayonnaise, mustard, vinegar, salt & pepper, worcestershire sauce and parmesan cheese to blender. Blend until combined. Slowly add olive oil until fully incorporated.
  12. Remove potatoes from oven and drizzle with dressing and top with a Parmesan crisp.
