Sweet Potato Chili (Paleo)

Ingredients
  • 2 Tbsp coconut oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 8 ounces mushrooms, sliced
  • 2 sweet potatoes, peeled and diced
  • 2 parsnips, peeled and diced
  • 1 lb ground beef
  • 1 lb ground sausage
  • 2 cups tomato sauce
  • 2 cups bone broth
  • 8 ounces diced tomatoes, with juice
  • 1 Tbsp chili powder (more or less depending upon your taste preferences)
  • 1 tsp ground cumin
  • ¼ tsp cayenne pepper
  • 1 tsp dried oregano
  • 2 bay leaves
  • 1 tsp cinnamon
  • 1 tsp salt
  • ¼ tsp (approximately) freshly ground pepper
Instructions
  1. In a large dutch oven, brown hamburger and sausage. Once browned, remove, drain and set asides.
  2. Add in coconut oil over low-medium heat. Once hot, add chopped onion, garlic cloves, mushrooms, sweet potatoes, and parsnips. Cook until onion is translucent.
  3. Add in spices, mixing to combine.
  4. Add stock, tomato sauce, tomatoes and ground beef and sausage.
  5. Simmer until veggies are tender.
  6. Season with additional salt and pepper, if needed.
  7. Serve and garnish with cilantro and avocado
