Traditional Hawaiian Flatbread with Crispy Pancetta

Serves: 4
  • 1 Flatbread
  • ½ cup BBQ sauce
  • ½ pineapple, thinly sliced
  • 1 Tbsp butter
  • 4 oz. pancetta
  • 1 cup shredded pork
  • ½ cup sheep's cheese (cheese of choice)
  • green onion
  1. Make flatbread recipe.
  2. Meanwhile cut pancetta into small pieces and pan fry until crisp. Remove and drain on paper towels to remove excess grease.
  3. Drain grease from pan, add butter and pineapple. Cook until just beginning to caramelize, 1-2 minutes per side.
  4. Spread bbq sauce on flatbread, top with shredded pork, pineapple, sheep's cheese and crisped pancetta.
  5. Back for an additional 8-10 minutes or until cheese is melted.
  6. Top with thinly sliced green onion and enjoy!
