Tomato-less Marinara Sauce

Ingredients
  • 1-2 Tbsp coconut or olive oil
  • 1 large onion, chopped
  • 1 Tbsp minced garlic
  • 4 large carrots, chopped
  • 1 can sweet potato puree (could use 1½ cup mashed sweet potatoes)
  • 2 Tbsp balsamic vinegar
  • ¼ cup olive oil
  • 1 bunch basil, chopped
  • ½ tsp marjoram
  • 1 Tbsp dried oregano
  • salt & pepper, to taste
  • ½ cup broth (more or less depending upon desired thickness)
Instructions
  1. Prepare all ingredients.
  2. Heat a small dutch oven or medium saucepan over medium heat.
  3. Add in 1 Tbsp olive oil, onion and carrots.
  4. Cook for 5-10 minutes or until vegetables are tender adding more oil as needed.
  5. Add in garlic and cook until fragrant or 1-2 minutes.
  6. Add in sweet potato puree, balsamic, chopped basil, salt & pepper, marjoram, oregano & broth.
  7. Simmer 5 minutes and puree either via blender or immersion blender.
  8. While blending slowly add in ¼ cup olive oil until fully incorporated.
  9. Place back in pan and heat to warm if needed.
  10. Store in a glass jar in the refrigerator and use on all your favorite dishes as marinara.
