Stuffed Sweet Potatoes with Short Ribs & Cabbage

Serves: 4
- 2 Sweet Potatoes, baked
- 2 cups leftover short ribs, shredded
- 4 cups shredded green and red cabbage
- 2 Tbsp butter
- 1 cup sauce from short ribs
- Goat cheese, optional
- Fresh basil leaves, chopped
- Bake sweet potatoes.
- Chop 4 cups green and red cabbage.
- Heat a large skillet over medium heat and add butter.
- Once hot add in cabbage and saute until just beginning to soften.
- Add in 1 cup of sauce and let simmer until reduced 5-10 minutes.
- Warm short ribs and shred.
- Once potatoes are baked, remove and cut in half.
- Add butter to each half and mash the insides with a fork (leaving in the skin).
- Top with wilted cabbage and shredded beef.
- Garnish with goat cheese crumbles (optional), chopped basil and a drizzle with additional sauce from short ribs.
