Stuffed Sweet Potatoes with Short Ribs & Cabbage

Serves: 4
  • 2 Sweet Potatoes, baked
  • 2 cups leftover short ribs, shredded
  • 4 cups shredded green and red cabbage
  • 2 Tbsp butter
  • 1 cup sauce from short ribs
  • Goat cheese, optional
  • Fresh basil leaves, chopped
  1. Bake sweet potatoes.
  2. Chop 4 cups green and red cabbage.
  3. Heat a large skillet over medium heat and add butter.
  4. Once hot add in cabbage and saute until just beginning to soften.
  5. Add in 1 cup of sauce and let simmer until reduced 5-10 minutes.
  6. Warm short ribs and shred.
  7. Once potatoes are baked, remove and cut in half.
  8. Add butter to each half and mash the insides with a fork (leaving in the skin).
  9. Top with wilted cabbage and shredded beef.
  10. Garnish with goat cheese crumbles (optional), chopped basil and a drizzle with additional sauce from short ribs.
