In a medium skillet, add 2 Tbsp butter and the spiralized sweet potato. Saute until beginning to soften and add water to finish cooking. Continue cooking until water has boiled off and 'noodles' have softened. Remove and set aside.
In same skillet brown the sausage, drain and set aside.
Add in mushrooms and cook until beginning to brown and add in chopped spinach until just wilted.
Once the mushrooms are cooked and spinach is wilted add back in the sausage and noodles. Mix to incorporate and season with salt & pepper.
Top with fried eggs (optional) and serve.
