Grain Free Brownie Cookie Bars

- 1 cup almond Flour
- ¼ tsp baking soda
- ¼ tsp salt
- ½ tsp cinnamon
- 1 cup finely shredded, unsweetened coconut
- ¼ cup butter (coconut oil)
- ¼ cup coconut sugar
- 1 egg
- 1 tsp vanilla extract
- ⅓ cup semi-sweet chocolate chips
- 1 batch blender brownies (without the caramel sauce)
- Preheat oven to 350 degrees.
- Prepare an 7 x 11 inch baking dish with coconut oil or butter.
- In a bowl mix almond flour, baking soda, salt, cinnamon and coconut flakes (may need to add to a food processor to finely shred the coconut flakes)
- In a separate bowl, add melted butter (or coconut oil), coconut sugar, egg, and vanilla. Mix well to combine.
- Add we ingredients to dry and mix until incorporated. Gently stir in chocolate chips and press into to bottom of the prepared pan.
- Make blender brownies and pour on top of the cookie bottom. Sprinkle with chocolate chips and place in the oven.
- Bake for 30-40 minutes or until inserted toothpick comes out clean.
- Let cool slightly, cut and enjoy.
