Grain Free Brownie Cookie Bars

  • 1 cup almond Flour
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 1 cup finely shredded, unsweetened coconut
  • ¼ cup butter (coconut oil)
  • ¼ cup coconut sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ⅓ cup semi-sweet chocolate chips
  • 1 batch blender brownies (without the caramel sauce)
  1. Preheat oven to 350 degrees.
  2. Prepare an 7 x 11 inch baking dish with coconut oil or butter.
  3. In a bowl mix almond flour, baking soda, salt, cinnamon and coconut flakes (may need to add to a food processor to finely shred the coconut flakes)
  4. In a separate bowl, add melted butter (or coconut oil), coconut sugar, egg, and vanilla. Mix well to combine.
  5. Add we ingredients to dry and mix until incorporated. Gently stir in chocolate chips and press into to bottom of the prepared pan.
  6. Make blender brownies and pour on top of the cookie bottom. Sprinkle with chocolate chips and place in the oven.
  7. Bake for 30-40 minutes or until inserted toothpick comes out clean.
  8. Let cool slightly, cut and enjoy.
