Savory Bacon and Balsamic Watermelon Salad

- 6 cups cubed watermelon
- ¼ cup sliced red onion
- 1 lb bacon
- ⅓ cup sesame seeds or sliced almonds
- 2 Tbsp fresh mint
- 2-3 Tbsp fresh basil
- 1 Tbsp olive oil
- 1 tsp sea salt
- ⅓ cup feta cheese (optional)
- Balsamic Glaze:
- ¼ cup balsamic vinegar
- 2 tsp maple syrup (optional)
- To make glaze, add balsamic vinegar to a small saucepan and sweetener (if using) bring to a simmer and let simmer until reduced in half.
- Meanwhile bake Bacon.
- Cube watermelon, slice onion, and chop fresh basil and mint.
- Add watermelon, onion, basil, mint to a large bowl. Toss with olive oil and salt.
- Once bacon is done and slightly cooled. Chop and toss in salad along with feta if using.
- Drizzle salad with balsamic glaze and enjoy.
- **Because the watermelon releases water as it sits, this salad does not store well.
