Hawaiian Pulled Pork with Rice

Ingredients
  • 1 20oz can crushed pineapple
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon salt
  • freshly ground black pepper, to taste
  • 1 teaspoon ground cumin
  • 2 teaspoons ground cinnamon
  • 1 boneless pork butt or shoulder, fat cap scored (about 3 pounds)
  • 1 cup fresh pineapple, sliced
  • 2 tablespoons butter
Instructions
  1. Place all ingredients in a slow cooker except for the fresh pineapple and butter.
  2. Mix all ingredients together in slow cooker.
  3. Cook on high for 4 hours or on low 6-7 hours until pork is cooked through.
  4. After pork is finished, heat a skillet on medium and melt butter.
  5. Place pineapple slices into pan and caramelize both sides.
  6. Remove slices and cut into smaller pieces.
  7. As pineapple slices are caramelizing, pull pork out of slow cooker and shred using two forks.
  8. Use a spoon to remove some of the crushed pineapple and juices from the slow cooker and mix with the shredded pork.
  9. Plate with your favorite side and top with caramelized pineapple.
