Cauliflower Rice

Serves: 4
  • 1 head cauliflower
  • ½C Chicken Broth
  • 2 T Butter
  1. Wash and clean cauliflower.
  2. Cut stem and leaves off, leaving only cauliflower florets.
  3. Place a small handful into a blender or food processor.
  4. Process until cauliflower is the consistency of rice.
  5. Repeat process until all the cauliflower is processed.
  6. Place cauliflower rice in pan on stovetop with chicken broth and cook, covered.
  7. Once cauliflower becomes soft, turn heat off and stir in butter.
  8. Serve with your favorite dish!
