Short Rib Potato Smashers

Serves: 6
  • 2-3 cups slow cooker beef short ribs, shredded
  • 12 small potatoes
  • 4 Tbsp butter
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt & pepper
  • 1 onion, thinly sliced
  • 8 ounce package sliced mushrooms
  • 1 cup cheese, optional
  • Peach BBQ sauce
  1. Wash and boil potatoes in a pot.
  2. Once fork tender remove and place on a prepared baking sheet.
  3. Cut with a sharp knife halfway through the potato making an X-shape.
  4. With a potato masher, smash the potato working to keep it all together. Repeat with remaining potatoes.
  5. Add a pat of butter to the top of each potato. Sprinkle with garlic powder, paprika, salt and pepper.
  6. Top with ¼ cup shredded short ribs and some onions and mushrooms.
  7. Finish with shredded cheese.
  8. Place in the oven at 425 degrees and cook until cheese has melted and flavors have combined.
  9. Remove and drizzle with homemade BBQ sauce and enjoy.
