Short Rib & Peach Panini (Grain-Free)

Ingredients
  • 1 recipe flatbread
  • 4 slices provolone cheese
  • 2 cups shreddedbeef short ribs
  • 1 large peach, diced
  • 1 cup sweet corn
  • 1 tomato, chopped
  • 2 Tbsp fresh basil, chopped
  • BBQ Sauce
Instructions
  1. Make flatbread into a square according to directions.
  2. Using a pizza cutter, cut flatbread to resemble sandwich bread.
  3. Meanwhile mix together peach, sweet corn, tomato and basil in a small skillet over medium heat. Heat just to warm and remove.
  4. In same skillet over medium heat, butter one side of flatbread. Place in pan and top with a slice of cheese, BBQ sauce, shredded short ribs and the peach and corn salsa.
  5. Butter another piece of bread and place on top.
  6. Smash down sandwich with a spatula and cook until both sides are crips and cheese is melted.
  7. * Can use panini press if desired.
