10 minute Cucumber Grape Salad with Poppyseed Dressing

Serves: 6-8
- 4 medium cucumbers
- 2 cups grapes, halved
- Dressing:
- ¼ cup strawberries
- 1 garlic clove
- 2-3 Tbsp honey
- ¼ cup vinegar
- ⅓ cup olive oil
- 1 Tbsp poppy seeds
- sea salt & pepper, to taste
- Peel, slice and halve the cucumbers. Place in a large bowl.
- Add to that halved grapes and mix.
- In a blender add strawberries, garlic cloves, honey, vinegar, olive oil, poppy seeds, salt and pepper.
- Puree slowly until smooth and incorporated.
- Pour dressings over cucumbers and grapes. Mix and serve!
- **For better storage pour dressing on right before serving.
