The Best Moist Cornbread Ever

  • 1½ cups cornmeal (finely ground)
  • ¾ cup tapioca flour
  • ⅓ cup coconut sugar (or honey)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ¾ tsp salt
  • 6 Tbsp butter
  • 2 eggs
  • 1 cup milk (or milk alternative)
  • 1 Tbsp lemon juice
  1. Preheat oven to 400 degrees.
  2. Prepare an 8x8 dish by using parchment paper or buttering the sides.
  3. In a bowl mix together the cornmeal, tapioca flour, coconut sugar, baking powder, baking soda and salt.
  4. In another bowl melt the butter and let cool slightly.
  5. Whisk in the eggs, milk and lemon juice.
  6. Pour wet ingredients into dry and mix until all clumps are gone.
  7. Pour into baking pan and bake for 20-25 minutes or until toothpick inserted comes out clean.
