Broccoli Cheddar Soup with Sausage

Serves: 8
- 1 lb sausage
- 2 Tbsp olive oil
- 2 tsp minced garlic
- 1 sweet onion, chopped
- 1 large carrot, chopped
- 4 cups broccoli florets
- 1½ cups white beans, rinsed
- 1½ - 2 cups milk (milk alternative)
- 2 cups chicken broth
- 2 cups cheddar cheese, shredded
- 4 ounces goat cheese
- 1 tsp dried thyme
- ¼ tsp nutmeg
- salt & pepper, to taste
- Fresh chives and cheese curds for garnish (optional)
- In a medium dutch oven cook sausage, drain and set aside.
- To the same pan over medium heat add in olive oil and saute onion and carrots until onions are tender.
- Once tender, add in garlic and cook until fragrant about 1-2 minutes.
- Add in broccoli florets, beans, broth, and milk.
- Add back in sausage, thyme, nutmeg, salt and pepper and cook until simmering.
- To the pot add in cheddar cheese and goat cheese and mix until melted.
- Serve garnished with chives and cheese curds.
