Broccoli Cheddar Soup with Sausage

Ingredients
  • 1 lb sausage
  • 2 Tbsp olive oil
  • 2 tsp minced garlic
  • 1 sweet onion, chopped
  • 1 large carrot, chopped
  • 4 cups broccoli florets
  • 1½ cups white beans, rinsed
  • 1½ - 2 cups milk (milk alternative)
  • 2 cups chicken broth
  • 2 cups cheddar cheese, shredded
  • 4 ounces goat cheese
  • 1 tsp dried thyme
  • ¼ tsp nutmeg
  • salt & pepper, to taste
  • Fresh chives and cheese curds for garnish (optional)
Instructions
  1. In a medium dutch oven cook sausage, drain and set aside.
  2. To the same pan over medium heat add in olive oil and saute onion and carrots until onions are tender.
  3. Once tender, add in garlic and cook until fragrant about 1-2 minutes.
  4. Add in broccoli florets, beans, broth, and milk.
  5. Add back in sausage, thyme, nutmeg, salt and pepper and cook until simmering.
  6. To the pot add in cheddar cheese and goat cheese and mix until melted.
  7. Serve garnished with chives and cheese curds.
