5 Ingredient Healthy Caramel Popcorn Balls

Serves: 12
  • ¾ cup unpopped popcorn, popped
  • 1 cup sorghum
  • 1 Tbsp butter
  • 1 tsp vanilla
  • ½ tsp baking soda
  • Add-Ins:
  • ½ cup dried cranberries
  • ½ cup crushed pretzel
  • ½ cup crushed pecans
  • ⅓ cup white chocolate, melted
  • crushed unsweetened coconut flakes
  • shaved dark chocolate
  1. Pop popcorn and set aside. Should have about 10 cups popped popcorn.
  2. In a small saucepan over medium heat, heat molasses and butter and it just begins to boil.
  3. Turn down heat until simmer and continue cooking and stirring for an additional 4-5 minutes being careful not to burn.
  4. Turn off heat and stir in vanilla and baking soda.
  5. Continue to stir until it bubbles up and carefully pour over popcorn.
  6. Add in optional add-ins and mix thoroughly.
  7. Let cool slightly until it is just warm to the touch and begin forming into balls.
  8. Place balls on parchment paper and let completely cool.
  9. You may have to continue forming into balls as they cool. You will need to use some force with this.
  10. Once cooled, drizzle with white chocolate and sprinkle with crushed coconut flakes and shaved dark chocolate.
