Spring Blackberry Steak Salad

Serves: 4
  • Blackberry Dressing:
  • ½ tsp Minced Garlic
  • 1 tsp Dijon Mustard
  • ½ cup Olive Oil
  • 1 cup Blackberries
  • 3 Tbsp Balsamic Vinaigrette
  • 1 tsp Tamari Sauce
  • Salt & Pepper, to taste
  • Salad:
  • Steaks
  • Lettuce mix
  • Blackberries
  • Sweet Potatoes
  • Asparagus
  • Salt & Pepper, to taste
  • Cinnamon, to taste
  1. Preheat oven to 375 degrees.
  2. Peel and cube sweet potatoes, drizzle with melted coconut oil and season with salt and pepper. Place on prepared pan.
  3. Trim asparagus ends and place on a separate pan.
  4. Bake both until tender and crisp on the outside, about 30 minutes.
  5. Meanwhile, heat grill and season steaks with salt and pepper.
  6. Grill to your liking.
  7. Mix all ingredients of the dressing together in a food processor adding the olive oil slowly. Set aside.
  8. To assemble, place lettuce, asparagus and roasted sweet potatoes on a plate. Add blackberries, cut steak and drizzle with the blackberry dressing.
