Bacon and Cheddar Blender Potato Pancakes and 7 Ways to Use Leftovers

Serves: 6
  • 1 cup oatmeal
  • 5 eggs
  • 1 cup mashed potatoes
  • ½ cup cottage cheese
  • 1 cup shredded cheddar cheese
  • ½ pound crispy cooked bacon, crumbled
  • 2 Tbsp fresh chives and/or rosemary chopped
  • salt and pepper, to taste
  • Optional Toppings:
  • Soft Fried Eggs
  • 20 minute Cranberry Sauce
  1. Place oatmeal, eggs, mashed potatoes, cottage cheese, cheddar cheese and fresh or dried herbs in blender.
  2. Puree until smooth.
  3. Fold in chopped Bacon.
  4. In a large skillet over medium heat, add butter and pour batter on pan. Cook for 1-2 minutes on each side or until golden brown. Repeat until all batter is used.
  5. Top with soft, fried eggs and cranberry sauce.
  6. Enjoy!
