Ingredients
Cookie:
  • 2 cup Blanched Almond Flour
  • 1 cup Arrowroot Powder, plus ½ cup for dusting
  • 1 tsp Salt
  • 1 tsp Pure Vanilla Extract
  • ⅓ cup Maple Syrup
  • ¼ cup Organic Coconut Oil, melted
Filling:
Toppings:
  • ¼ cup semi-sweet chocolate chips, melted
  • ¼ cups pecans, chopped
Instructions
  1. Make caramel sauce according to directions and boil until thick and syrupy. Let cool.
  2. Preheat oven to 350 degrees.
  3. Mix almond flour, arrowroot powder, and salt together in a medium bowl.
  4. Add in vanilla extract, maple syrup and melted coconut oil. Mix until a soft dough forms.
  5. Scoop 1-2 Tsp of dough into your hands and roll into a ball. Push your finger ¾ of the way through the center. Place on baking sheet.
  6. Repeat with remaining dough.
  7. Fill each center with enough caramel to come to the top.
  8. Bake for 20 minutes and place on cooling rack.
  9. Once cool, drizzled with melted chocolate and sprinkle with nuts.
  10. Enjoy!
