Banana Bread French Toast Cups

Ingredients
  • 1 batch banana chia seed cake (can make in a loaf pan it just needs to bake longer)
  • 4 eggs
  • 1 cup milk (or milk alternative)
  • 2 tsp vanilla
  • 2 tsp cinnamon
  • ½ tsp nutmeg
Sticky Pecan Sauce
  • 6 Tbsp butter
  • ¼ cup coconut sugar
  • ½ cup pecans, chopped
  • 1 Tbsp maple syrup
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
Instructions
  1. Preheat oven to 350 degrees and grease muffin tin.
  2. Cube banana bread into 1 inch slices.
  3. Whisk eggs in a bowl and whisk in vanilla, cinnamon, and nutmeg.
  4. Place cubed banana bread into a large bowl and add egg an milk mixture.
  5. Let soak for 10-15 minutes.
  6. Meanwhile mix together in a small bowl, melted butter, coconut sugar, maple syrup, cinnamon, nutmeg and pecans.
  7. Place soaked cubed banana bread into muffin tins (should have enough for all 12 and they may be heaping).
  8. Drizzle with pecan sauce.
  9. Bake for 30-35 minutes or until browned on top and cooked through.
