Chai Spiced Paleo Donuts with Vanilla Bean Glaze

Ingredients
  • 1¼ cup Almond Flour
  • ¼ tsp salt
  • ¼ tsp baking soda
  • 1 tsp nutmeg
  • 1½ tsp cinnamon
  • 1 tsp ground ginger
  • ½ tsp cardamon
  • ¼ tsp ground cloves
  • 3 eggs (egg replacement for vegan)
  • ¼ cup coconut oil, melted
  • 2 TBS honey or maple syrup
  • 1 tsp pure vanilla extract
GLAZE
  • 2 tablespoons coconut oil
  • 1 cup powdered coconut sugar
  • Beans from 1 vanilla bean (or 1 tsp vanilla)
  • 1 tbsp maple syrup
Instructions
  1. Preheat donut maker or oven to 350F.
  2. Whisk together all dry ingredients in a bowl.
  3. Combine all wet ingredients in a bowl.
  4. Add wet ingredients to dry and stir until smooth.
  5. Spoon dough into donut maker, filling them ⅔ the way.
  6. Cook for 2-3 minutes and flip. Continue cooking until springy to the touch and slightly browned. DO NOT OVER BAKE!
  7. If using the oven, bake for 10 minutes.
  8. To make glaze in a small saucepan over low heat melt coconut oil, powdered sugar, vanilla bean and maple syrup and bring to desired consistency.
  9. Let cool donuts cool and dip in vanilla glaze.
  10. Sprinkle or coat with sprinkles.
