Ingredients
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 tsp garlic, minced
  • 3 stalks celery, diced
  • 2 large carrot, peeled and diced
  • 3-4 cups shredded chicken
  • 1 cup white beans
  • 1 box fired roasted tomatoes
  • 4 cups chicken broth
  • 1 cup corn kernels
  • 1 Tbsp chili powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 full batch homemade buffalo sauce
TOPPINGS:
  • Sriracha sauce or hot sauce
  • Chopped Spinach
  • Roasted Pumpkin seeds
  • Cilantro
  • Crumbled goat cheese (optional)
  • Ranch Dressing
Instructions
  1. In a medium skillet, add olive oil over medium heat and cook onion until caramelized.
  2. Add in garlic and cook for an additional minute and add to large slow cooker.
  3. In a small saucepan make buffalo sauce.
  4. Add remaining ingredients to slow cooker, along with buffalo sauce and set on low.
  5. Cook 5-8 hours.
  6. Serve with all of the toppings
