Add oats, shredded coconut, macadamia nuts, chia seeds, flax meal, salt and cocao nibs to a large bowl.
Add in melted coconut oil, honey, vanilla and almond butter.
Mix well.
Press into an 8 x 11 inch pan lined with parchment paper.
Refrigerate or freeze for at least 1 hour.
Cut into individual bars and wrap with cling wrap.
Store in refrigerator.
** For bars that are slightly less chewy, add honey, oil and almond butter to a saucepan. Bring to a boil, boil 3-5 minutes and pour over dry ingredients.
