Chewy No-Bake Gluten Free Granola Bars

  • 2 cups oats
  • 1½ cup unsweetened shredded coconut
  • ¼ cup crushed macadamia nuts
  • 2 Tbsp chia seeds
  • ¼ cup flax meal
  • pinch of salt
  • ½ cup cocao nibs (could sub chocolate chips)
  • ¼ cup coconut oil
  • ½ cup honey
  • 2 tsp vanilla
  • 1 cup almond butter
  1. Add oats, shredded coconut, macadamia nuts, chia seeds, flax meal, salt and cocao nibs to a large bowl.
  2. Add in melted coconut oil, honey, vanilla and almond butter.
  3. Mix well.
  4. Press into an 8 x 11 inch pan lined with parchment paper.
  5. Refrigerate or freeze for at least 1 hour.
  6. Cut into individual bars and wrap with cling wrap.
  7. Store in refrigerator.
  8. ** For bars that are slightly less chewy, add honey, oil and almond butter to a saucepan. Bring to a boil, boil 3-5 minutes and pour over dry ingredients.
