Healthy Fruit Pizza with Watermelon Crust

  • 1 complete 1" slice of watermelon
  • ½ cup heavy whipping cream (you can sub coconut whipped cream)
  • 4 ounces cream cheese
  • ¼ cup powdered coconut sugar
  • 2 tsp pure vanilla
  • ¼ cup oatmeal
  • 2 tsp chia seeds
  • 2 Tbsp flaxmeal
  • 2 Tbsp chopped walnuts
  • 1 Tbsp butter (or coconut oil)
  • 1 Tbsp honey
  • Butterscotch sauce
  • Peaches
  • Strawberries
  • Blueberries
  • Sweet Cherries
  1. Cut watermelon slice and set aside.
  2. In a medium bowl, whip cream, cream cheese, powdered sugar, and vanilla until stiff peaks form and set aside.
  3. In a small saucepan make butterscotch sauce (you will have extra left over).
  4. Meanwhile in a small bowl mix oats, chia seeds, flaxmeal and chopped walnuts.
  5. Stir in melted butter and honey until a moist crumble forms.
  6. To assemble, spread frosting gently over watermelon, top with sliced fruit, sprinkle with granola and drizzle with butterscotch sauce.
  7. Serve or store in refrigerator until ready to serve.
