Egg and Sweet Potato Leftover Scramble

Serves: 2
  1. Heat skillet over medium heat and add butter.
  2. Take leftovers from my Savory Chicken and Green Bean Salad and add to the skillet.
  3. Add sliced mushrooms and any additional vegetables of your choice.
  4. Sautee vegetables and leftovers until softened.
  5. Scramble two eggs.
  6. Remove vegetables and leftovers from skillet (optional)
  7. Add eggs to skillet.
  8. Cook thoroughly.
