Healthy Cherry Peach Crisp

Ingredients
  • 5-6 peaches, thinly sliced
  • 1 cup sweet cherries {pitted-fresh or frozen}
  • ⅓ cup coconut sugar
  • 2 tbsp arrowroot powder {tapioca starch}
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 2 Tbsp cold butter
TOPPING
  • 1½ cups muesli
  • ¼ cup coconut sugar
  • ¼ tsp salt
  • 4 Tbsp butter, melted
***If you do not have muesli use these dry ingredients:
  • 1 cup old-fashioned oats
  • ½ cup unsweetened coconut flakes
  • ¼ cup hemp hearts
  • 2 Tbsp chia seeds
  • ⅓ cup flax meal
  • ½ cup buckwheat groats
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
Instructions
  1. Preheat oven to 350 degrees.
  2. Prepare the filling by mixing sliced peaches, cherries, coconut sugar, arrowroot starch, vanilla and cinnamon in a large bowl.
  3. Pour into a 9x9 inch pan and top with chunks of butter.
  4. To prepare the topping add muesli {or dry ingredients} with coconut sugar, salt and melted butter in a bowl. Stir into the mixture until moistened throughout, adding up to 1 more tablespoon of butter if it seems dry.
  5. Use your hands and crumble mixture across the filling until evenly distributed.
  6. Bake for 30-40 minutes or until the filling is bubbling around the edges and the top is lightly golden.
  7. Let the crisp rest for 5-10 minutes before serving. Enjoy!
