Make-Ahead Healthy Breakfast Tacos

Serves: 4-6
  • 3-4 cups shredded meat of choice {I used slow cooked shredded pork shoulder}
  • ½ yellow onion, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 Tbsp olive oil
  • 1 packet Simply Organic Mild Taco Simmer Sauce
  • Tortilla shells
  • Scrambled or Fried Eggs
  • Avocado
  • Diced Tomatoes
  • Lettuce
  • Cheese
  • Jalapeno Peppers
  • Fresh Cilantro
  1. Slow cook meat and shred.
  2. Dice onion and slice bell peppers.
  3. In a large skillet, add 2 Tbsp olive oil and heat over medium heat.
  4. Add in onion and peppers and cook until softened.
  5. Once tender, add in shredded meat and pour in packet of Simply Organic Mild Taco Sauce.
  6. Stir to combine and continue simmer for an additional 5 minutes.
  7. Place on tortilla shell and top with your favorite toppings.
  8. OR place meat in a glass container and refrigerator to be warmed up and eaten all week long
