Pancakes.
A stack of flap jacks so fluffy and delicious you don’t know what to do with yourself. Could it be real? Trust me you won’t know what hit you when you cut into this stack of fluffy golden goodness. Plus the ease, oh the ease. Five-ingredient blender protein pancakes that are so easy it really is a quicker alternative than take out even on the craziest of days.
Not that I would know crazy.
Life is good, smooth and relaxing around here. Said no one ever.
But I can tell you something these protein pancakes are life savers. Breakfast can be served morning, noon or night if these are a part of it. We all know what good pancakes are. Fluffy, light, slightly sweet and crisp on the outsides from frying them in a small amount of butter and topping it with a little bit of maple syrup.
Honestly, we probably have the pancakes more times at night than in the morning. And they make their appearance multiple times a week because they really are that easy and that delicious that your really don’t care. I mean, who is going to deny pancakes? Yea, didn’t think so.
It is everything you wanted from the typical carbohydrate loaded breakfast, pastries, cereal, granola bars, you know the typical “breakfast foods” but without all the carbs. Yea, yea there are still some and gasp…she used another grain, but seriously these are protein filled pancakes that you could make plenty of substitutions to enhancing their nutritional value.
But because I’ve promised real life all of the time, this is how we roll. Pancakes, lots of them and often.
Now don’t get me wrong, I typically don’t every just eat pancakes. I like to “adultify” them. <- I’m certain that word is in the urban dictionary. You know add lots of flavorings, toppings and other additions making it more sophisticated enticing the palate. By sophistication I mean chopped fruit, nuts and seeds with melted butter plus syrup. Real sophistication I know
But the options are endless. From fresh fruit syrup to sausages wrapped in pancakes, dill pancakes with ham, and even Caprese flap jacks life is good when pancakes are in it.
My advice, let the kid inside of you come to life, add a touch of sophistication and put this recipe on the menu. The quickest, easiest and most delicious meal you’ll eat. The better news, you can always have the ingredients on hand. So when in doubt and in a pinch make protein pancakes. You can’t go wrong!

- 1 cup cottage cheese
- 1 cup old fashioned oats (gluten-free)
- 5 large eggs
- 1-2 tsp cinnamon
- 1 Tbsp maple syrup (optional)
- Place all ingredients in a blender and puree until smooth.
- In a large frying pan over low-medium heat, add a small amount of butter and pour about ¼ cup of batter, repeating until the pan is filled.
- Cook until you start to see bubbles form, flip and cook for another minute or until golden brown on both sides.
- Repeat until all batter has been used.
- Top with your favorite toppings
