This week kicked off a 21-Day salad challenge {learn more here}. Because I’m always under the belief that the more veggies you eat, the better off you are. Unfortunately, vegetables tends to be the one thing left behind.
As a former salad hater myself, I’ve learned the art of what it takes to make vegetables enjoyable and even pleasurable.
Isn’t that the key – to enjoy healthy food. What we know, if you don’t enjoy it, you probably won’t stick to it – so my mission is helping you eat more veggies and desire to stick with it. That’s the goal of the 21-day salad challenge – to help you mix and layer salads in new combinations to come up with flavors you love.
With that, I thought today I’d focus all on veggies in the Friday Five!

- I don’t know if you can count this as getting all of your veggies in – but I’m OBSESSED with these muffins.
- I tried some new CLEAN protein powder this week and while I still love collagen, this was DELICIOUS!
- Hard pants {a.k.a jeans} are out during quarantine and all the soft pants are in. I’ve tried a billion different brands but come back to these over and over and over.
- This TV Series, I can’t say enough!
- I did some real ‘adulting’ this week and spent part of our stimulus money on a new refurbished Vitamix {GLORY}.

5 foods I’m batch cooking this weekend
Like I mentioned above, I would NEVER get as many vegetables in as I do without batch cooking them on the weekend. Even if I don’t get to the protein or the grain, a pan of roasted vegetables will help me tremendously all week.
Last week I got a little off track with Easter, but this week I’m clearing an hour on Saturday to knock out some batch cooking. Here’s what I’m prepping this week!

One last thing before I leave – I want to encourage you to test out a social sabbath this weekend. Twenty-four hours with no social media. I’ve been implementing this all year and honestly, it gives me a breath of fresh air – especially through this bizarre season we are living in.
Whether in the midst of a pandemic or during a normal week, try a 24-hour social media sabbatical. It may be just the break you need.
