So easy, delicious and so simple you could make these any morning of the week, even the busy workweek. I have to be honest, the 5-ingredient blender pancakes are on repeat here. But I’ve been looking for a dairy-free alternative for those of us who can’t handle all the cottage cheese.

While I love some eggs, I’ve also been looking for alternatives to hash. Secretly I just love warm protein pancakes in the morning and couldn’t stand not eating them with my kids. I need that extra protein boost to make it last and that’s where the secret ingredient comes in.
That ingredient, well it’s really a staple around here, is Vital Proteins collagen. You can learn about all the collagen benefits but know it’s loaded with vital protein sources we really don’t find in other sources in our diets. At least not on a regular basis.
I try to add collagen to at least one thing a day, and these protein pancakes are a great way to get it into my diet and my kids.
They just released a new collagen creamer and it is legit one of the best inventions I’ve ever seen. The creamer comes in multiple flavors and I thought, these gingerbread protein pancakes would pair well with the coconut creamer. Trust me, it did.
But you could use regular collagen just the same.
the recipe
The recipe is pretty simple and self-explanatory, which are my favorite kinds of recipes. Just add all the ingredients to the blender, puree until smooth, let sit a few minutes, and pour in a hot skillet with butter.
There you have it, healthy, protein-packed, fluffy gingerbread protein pancakes you’re entire family will love! Just note, this recipe only makes about six to eight regular sized pancakes, which serves 2-3 in our house. So you may want to double the recipe.

- 1 heaping cup oatmeal {Gluten-free}
- 1 cup unsweetened coconut milk yogurt {you can use cottage cheese}
- 2 eggs
- 2 Scoops Coconut Collagen Creamer
- 1 teaspoon baking powder
- 1 teaspoon apple cider vinegar
- 1 Tablespoon molasses
- 1 teaspoon vanilla
- 1 teaspoon ginger
- 1½ teaspoon cinnamon
- ½ teaspoon cloves
- ½ teaspoon nutmeg
- Pinch of salt
- Place all ingredients in a blender.
- Puree until smooth.
- Let sit 3-5 minutes.
- Meanwhile, heat a large skillet.
- Add butter and once hot pour in batter.
- Cook until bubbling about 1-2 minutes, flip and repeat!
