I don’t know what comes to mind when I say lettuce wrap, but I assume it’s not the same as when I say ice cream, cheesecake or pizza.
Rightfully so I suppose.
However I do want to challenge you to step outside your comfort zone and just open your eyes to the world of lettuce wraps. Like these healthy crispy chicken caesar lettuce wraps. I mean they kind of do give you heart eyes, right?
But, if I’m honest with you, I’m not even that fond of lettuce myself. In fact, I find my self arguing over time the idea of a lettuce salad knowing the fact that I am a nutrition expert and I probably should really love this green goodness as some would say. However, I’d be lying if I told you I loooooved it.
I don’t, okay.
It just isn’t the first thing I gravitate towards. Don’t get me wrong I can handle it, maybe even like it but never love it.
That is until the lettuce wrap was born.
Before we get into the healthy chicken caesar lettuce wrap lets break down some basic health, because I feel like we must when we talk about lettuce.
why it’s okay not to love lettuce
It’s okay not to love lettuce, because you’re a human. And humans have funny taste preferences. You’re unique, I’m unique, we’re all unique. But just because you don’t love it doesn’t mean you shouldn’t eat it. Or at least find unique and interesting ways to try it out.
Just to set the record straight {I know I’m a broken record on this subject} food fads like low-fat, low-carb, lettuce only, shakes only, fasting, no matter how good or bad it is, it isn’t going to be a miraculous cure for you.
Unfortunately there aren’t any of those in the food world. If there were I can assume we’d be one skinny nation. Instead they just seem to be traps to break your heart and rip it into a million and one pieces leading you all the way back to ice cream, cheesecake and pizza.

the answer
I can assure you you’ll never love lettuce when it’s forced upon you and touted to be THE ONLY answer to your health goals. I mean anything that is eaten over and over and over and over is bound to start looking disgusting and unappetizing at some point.
Our taste buds, our cells, our bodies desire variety.
Variety in flavor, in texture, and in nutrients. This is also the key to satiety.
So what is the answer to health? Listening to your unique body and providing it a variety of healthy foods you actually enjoy. Or at least finding ways to enjoy foods you don’t necessarily love but are healthy for you body, insert lettuce.
Sure you can use those “diets” as a starting point but they should never be the end all be all. It just won’t work and you’ll end up right back to where you started or worse. The best way to achieve lasting health is to find a standard that seems challenging yet doable and try it out. Experiment and add your own elements or take some out to make it appealing to you.
In the end you’ll probably find that a diet based on real food, grown from the earth, including things you don’t necessarily love are what you’ll end up craving. Because this was and is the intended source of life for your body. It’s perfectly created for your body and in time, in the right environment and with the right mindset you can surely start to love all the things you never thought you would.
baby steps
It takes baby steps. Small changes each day that slowly create the snowball effect of lasting change. Health you desire which also means easy{ier} health. Health that doesn’t take so much work, or prepping, or measuring or counting or resistance or willpower. Just health you don’t really have to think about, you just do. Why? Because you love it and you feel good and it just works.
For me this looks like chip crusted chicken breasts in lettuce wraps.
A little feisty, a lot fresh and the perfect balance of goodness that is easy.
I may not be the all-star health foodie, but I can tell you I’m finding a balance that works for me and my family. Because the only place to start is right where you are. So this recipe is meant to do just that.
So no matter where you are I want to scream it from the rooftops, health was never intended to be as difficult as we make it! If then, why does it consume our life?

Is to focus on the positives of health and healthy eating. Rather than restrict, deprive, starve, withhold and use every ounce of willpower, why not start with what you can eat, what you love and how great you do feel?

- Chip crusted chicken {I cut them into tenders before breading}
- roasted chickpeas
- 1 cup cherry tomatoes
- caesar dressing
- 12 big leafy lettuce leaves
- Parmesan cheese
- Make salad dressing in mason jar with lid. Set aside.
- Cut chicken into tenders and follow this recipe. Bake.
- Meanwhile make chickpeas and roast them in the oven.
- To make, place crispy chicken, sliced cherry tomatoes, chickpeas and parmesan cheese in lettuce wrap. Drizzle with caesar dressing and enjoy!
