I almost created the biggest food sin of all time.
I nearly posted an Italian recipe on Cinco De Mayo.
Only like the biggest foodie Holiday ever.
I know, I really need to get my head back in the game. The problem lately is that I haven’t been able to smell, which means I can’t taste, which means I can’t focus on life because I am so worried I will never be able to taste the pleasures of life again (cough, food) that I fret. All day and night I am frustrated because I can’t smell or taste anything.
Notta, nothing, nope. All because of the cold. This darn cold the germy little children gave me.
Humph.
This smell and taste issue is a huge concern for a foodie. It would be like a quarterback breaking his hand. The worst thing ever, right? Without the sense of taste and smell you’re pretty much doomed. I say this all, complaining right after I admitted to my husband that I get no where in life because I complain and keep myself right where I’m at. ->SIGH<-
So I’m telling you my sweet friends that I am vowing not to complain for seven days. Seven entire days without a mere thought of complaining. Can it be done? Anything can right? I’m sure going to do my best and see where this new philosophy gets me. I’ll keep you posted. Mark my word, in one week you will get the recap of no complaining, no matter the situation.

So to turn things to a positive, the up side to not having a sense of smell is that I can’t smell the germy little kiddos, four of which are in diapers. Yea, you know where I’m going. You can’t smell anything which can in some ways make life so much more enjoyable. My four year old now fills me in on who needs changed and I can’t smell it when I change it. This is good news all around.
I have to say that for most of the day, not having a sense of smell is quite enjoyable. It is like everything just seems so fresh. Strange I know, but enjoyable none-the-less. But then again, I will be glad to have it back. I do miss the smell of my girls, our shampoo and the food simmering on the stove. I guess you take the good with the bad.
So until my tastes come back we are all going to have to trust the family on how these recipes turn out. Including this one. My Cinco De Mayo specialty. Loaded sweet potato nachos with mango salsa. The combination of sweet and spicy plus the comfort of those fries. Trust me, you’ll want to chalk this up to a quick and easy family favorite.
Give me nachos any way and I’ll be happy. But amp it up with healthy sweet potato nachos and you’ve stolen my food cravings.
The sweetness of the mango mixed with the sriracha crema lines this dish up to be bursting with flavor. Not to mention everyone can choose the toppings of their choice. Think nacho bar. You’re smiling now, right?
Oh yes, the nacho bar happened and may I would suggest that it happen in your very own home?
Happy Cinco De Mayo! On a side note to give you a little laugh today at the expense of the hubs, I had to explain what Cinco De Mayo was to the him. ->EMBARRASSING<- He did pull through and mentioned that the Holiday was moving up there if this kind of food was served. Oh, what you say and do for the love of good food.
- 1 batch Sweet Potato Fries
- 2 cups Shredded Pork
- 1 cup Black beans
- ¼ cup Cheddar cheese, shredded
- 1 mango, peeled and chopped
- 1 avocado
- 1 ripe tomato
- 1 bunch cilantro
- lime juice
- salt
- Sliced jalapeno
- Cilantro
- Sriracha crema
- Cook sweet potato fries according to directions.
- Meanwhile make the mango salsa.
- Peel, pit and chop the mango and avocado. Place in a bowl. Add chopped tomato, and cilantro.
- Mix well and then add lime juice from 1 small lime and salt to taste. Set aside.
- Once fries are complete, place on baking sheet and top with cook, shredded pork, beans and cheese.
- Place back in the oven until cheese is melted.
- Remove and top with mango salsa, sliced jalapenos, additional cilantro and Sriracha crema.
- Enjoy!
