So there is a new revelation happenin’ in these parts. I finished a grad school assignment three days, count it three, before it was officially due. Is it i possible that I could be getting my life in control? Probably not, ->SIGH<- but it does mean I get to enjoy the weekend just a tid bit more. Plus we actually have plans for the weekend. I won’t spoil it for you but hopefully it goes better than the apple orchard incident earlier this year. Prayers would be appreciated.
In other news, it’s halloween the most dreaded Holiday of the year. I know, I’m such a party pooper. Unfortunately we now have a four year old ->TEAR<- and that means that she is starting to realize that there is a holiday which allows her to dress-up, get way too much candy and carve a pumpkin. Seriously how am I suppose to compete with that? Lame mom tried to convince her that we could do pizza (aka flatbread) and rent a movie of her liking. Yes, I said rent, people really still do that….I think? Maybe we are the only lame ones who actually enjoy going into a store scouring around and looking for the perfect movie, or not? Somebody back me up here!
So I tried to “bribe” her into something really fantastic that didn’t involve me tottling her around in a costume asking for candy. I now realize why my mom lied to us and told us that kids over the age of eight (I was practically a baby) couldn’t trick-or-treat. I get it mom, I do so I will stop telling you, you robbed us of our childhood. ->AHEM<- So basically I am turning into my mom. Maybe, just maybe I need to lighten up and have more fun with it like this lovely couple. I have no idea who in the world they are but their costume choice is pretty fantastic. No actually it is hilarious. If only I could convince the hubs to go as a bunny. Classic all the way around.
And if you don’t know what they are dressed as, then you must go to the movie store tonight and rent “A Christmas Story.” Live it up people, live it up. This is coming from someone who has a negative attitude about the very holiday upon us. Let’s just get to the flatbread shall we? I’m not even sure what to call this. It is a combination of Italian sausage, salami, sauteed apples and wilted spinach with a sprinkling of Parmesan cheese. Trust me, the flavor combinations on this flatbread is way more fantastic than it looks, plus uber filling. Is uber a word and can I use it there? Phew, good thing it is Friday.

- 1 Grain Free Flatbread - Find Recipe Here
- 1 Cup Tomato Sauce
- 1 Pound Italian Sausage
- ¼ Pound Salami, chopped
- 1 Tbsp Butter
- 2 Apples, diced
- 2 Cups Spinach
- Parmesan cheese (optional)
- Prepare flatbread according to directions.
- In a small pan over medium heat, cook sausage.
- Remove sausage from pan and drain.
- Add butter to pan and place back over heat.
- Sautee apples until soft, then add spinach and combine until wilted.
- Top flatbread with tomato sauce, sausage, salami, sauteed apples and wilted spinach.
- Place back in oven for 5-8 minutes.
- Remove and sprinkle with parmesan cheese.
- Slice and serve.
